Crémant d'Alsace Extra-Brut

1999
1 bottle of 0.75 L
Type du vin : Sparkling
Cépage : 90% Pinot Blanc with Pinot Gris and Chardonnay .
Alcool : 12 % alc/vol
Température : 8 - 10 °C
Conservation : 4 years
Terroir:
Gravel, sand and calcareous clay soils, South-facing
Vinification:
The traditional (Champagne) method is used here: as in Champagne production, the Crémant's sparkle is obtained by a second fermentation in the bottle.
The base wine is bottled with a little liqueur de tirage (sugar and yeast solution), and the bottles are then binned on their side in the cellars.
The second fermentation takes place gradually, at a low temperature. For 36 months the wine lies on its deposit of yeast, acquiring richness and complexity. The bottles are then placed neck downwards in riddling tables, and the yeast deposit gradually slides down onto the cork. The bottle neck is dipped in a glycol solution at -30°C, and the yeast, frozen, can then be ejected from the bottle by the pressure of the carbon dioxide.
Lastly the bottle is topped up with some unsweetened wine to produce the Crémant Extra-Brut.
Elevage:
Ageing on its lees for 36 months.
The finished Crémant is aged for several more months in the cellars to reach perfect maturity.
Dégustation:
Fine, yellowish pale-gold appearance, with golden flashes. Very bright. Nice creamy, very white mousse. Tiny bubbles of perfect regularity.
Nose relatively fresh and orthodox. Some lovely flowery and fruity scents: almonds, apples, pears, medlar, with underlying orchard and bakery back-room smells, or biscuits.
Most pleasant entry onto the palate, with freshness and delicacy. Fine wine of substance, enlivened by its subtle, tiny bubbles. Nice pleasant flavour, without fault.
A very good product, classic, fine.
Alain Segelle - CIDD – January 2004
Accords mets-vins:
A traditional finish just a touch warmer than is habitual, ideal for toasts, health-drinking and consumption with sweet or savoury biscuits (in moderation).

- The Crémant d'Alsace appellation has been with us since 1976, but the last 15 years have seen dazzling progress. What is really seductive in these Alsace sparkling wines is their aroma of spice and fruit, more distinct than in other Crémants.
The Blanck family, who enjoy a fine reputation for the reliability and consistency of their range of white wines, always age their Crémant for a minimum three years before disgorging.
This 1999 has only recently left the cellars in September. Made from Pinot Gris and Chardonnay, it is clean, straightforward and thirst-quenching, with hints of peach stone.
Best served chilled with cold, savoury dishes.
Antoine Gerbelle - ELLE à table - October 2003.
