Terroir:
Furstentum lies at 400m altitude, facing due south.
It is one of the last remaining vestiges of the sub-Mediterranean era which Alsace experienced.
The soil is very stony and drains well because the calcareous bedrock breaks through.
Vinification:
The wines are vinified in temperature-controlled stainless steel vats.
Fermentation by the action of natural, indigenous yeast.
Dégustation:
- "An aromatic nose which remind the white fruits, the flowers and a large and rich structure that characterize this wine with racy minerality."

- Appearance: Brilliant yellow, with copious, thick tears.
Nose: Liveliness and an aggressive cut, over-riding toasted, smoky aromas.
Palate: On first contact the impression is of tropical fruit aromas, and a certain opulence, but the wine's acidity dominates on retro-olfaction.Without any doubt this wine is capable of developing over time.
Accords mets-vins:
- Starter of Brittany lobster with white peaches and "sucrines а l'ancienne"

- At the moment, in view of its immaturity we recommend serving it as an aperitif, or with starters, terrines, fish, or typical Alsatian dishes such as sauerkraut or Baeckaoffe.
In a few years it will prove a marvellous match for hot sea perch mousseline, delicate fish, certain grilled fish even.

- Marly soil, gres and limestone, not granite. Quite a different flavour. Good fruit. Fat and slightly perfumed. Yet racy acidity. Slightly exotic. Slight flavours of candied peel. Very good.
