Furstentum Pinot Gris (SGN) - 2001
Les Nectars - LES SELECTIONS DE GRAINS NOBLES

A wine for special occasions, for sipping as an aperitif or for appreciative tasting. Natural goose livers. Pastries, cream cakes, crème brulée, dishes with caramel, apple or pear Strudel, caramel sauce, vanilla ice cream. A wine to enjoy after the dessert, to savour with a cigar.


Terroir:
The Furstentum Grand Cru lies at 400m altitude, facing due south.
It is one of the last remaining vestiges of the sub-Mediterranean era which Alsace experienced.
The soil is very stony and drains well because the calcareous bedrock breaks through.


Vinification:
These grapes are picked by hand during successive passages through the vineyard, in order to bring in only grapes attacked by "noble rot".
Minimum concentration of the grapes in sugar:
- 279 g/l for Gewurztraminer,
- 279 g/l for Tokay,
- 256 g/l for Riesling,
- 256 g/l for Muscat.
Wines are vinified in temperature-controlled stainless steel vats during 6 months.
Fermentation by the action of natural indigenous yeast.
It will become sweet due to sugar concentration.

Tasting Note:

Color: golden yellow old. Fine and bright reflections powerful, fat.
Nose: very concentrated and complex, marked by aromas of acacia honey and chestnut, quince.
Taste: difficult to analyze its complexity, the attack is intense and sweet, very persistent équilibrée.Finale that never ends.

Après ce temps, la perception de la sucrosité peut évoluer.
Position 10/10 : liquoreux intenses, pinots gris, gewurztraminers gras et riches, sensation de miel et confit.

The nose is overripe, clean, with aromas of dried apricot, quince and exotic candied fruits. The palate is soft, tangy with developments on spices, orange peel and smoky on the finish. Superb wine to mature, which will age well
